how is wine fermanted? and what is the deal with the barrels?how do they work?

im looking to find out how they produce wine in the old style way?

Wine is fermented in a container, these days usually a stainless steel tank but many still use open concrete tanks (an open rectangle with wall about high chest height), or huge upright open oak barrels. A few small wineries ferment some wines in small barrels.

Moste wineries add some commercial yeast to the crushed grapes ( for red wine), or press the juice out of grapes and add yeast to the juice (to make white wine). Yeast eats the sugars in the grape juice and creates alcohol. For red wines, the color is extracted from the skins during fermentation and afterwards the juice is pressed out and the skins discarded. (a few wineries use the natural yeasts that exist in the air and on the grapes)

The old way — how old is old? — would be to use wood barrels. In Greece they used the local Pine wood which imparted a particular pine taste that is nowadays still found in Retsina wine; next would be the concrete tanks and most recently stainless steel.

The problem always is cleaning the fermenting container after fermentation is finished. The first two are easiest to clean.

Some wines, mostly more expensive red wines are then aged in small oak barrels which contain 225 – 350 liters.

The idea of using oak barrels is that some air enters through the pores of the wood which helps aging and the wood imparts some oak flavours.

But barrels are very very expensive and cheaper wines are made in steel and wood flavours are given by suspending some wood staves.
