Hi, I am going to a wine and food pairing party, and I want to make a salad that has mango, sweet potatoe, mint, lime, and vinegar in it. I know, it’s complex. What kind of wine will go with that? Thanks!

As soon as vinegar appears, wine disappears – sorry this is a cruel basic truth -

Let your vinegar and use lemon juice instead – some shrimps would be welcome in your salad …..

Then serve a crisp white wine such as chilled Muscadet or
white Viognier – some warm toasts served apart with a drop of olive oil would fit your salad hmmm
