I had lamb with a rub of dried ground wine grapes. The chef called it smak/smuk. Where can I find it?

It was a middle eastern restaurant in DC. The lamb chops were coated with the dried, ground wine grapes and then pan-fried. They were absolutely phenomenal (7 years later, I’m still craving this dish!). It was a dark purple color, the consistency of fine-ground coffee. I believe it was called smak/smuk but his accent was very heavy, so I may be wrong!

I am a former chef and what you had was “Sumac” and it is not a dried grape, but a berry from a bush in the Middle East, it is used in all major arabic cuisines, in Iran and other country’s it is one the table like salt and pepper in western cuisines, and you can buy it at Middle Eastern stores, just ask for it, they sell it in the spice section, even a fine food store like “Whole Foods” may sell it.

It is used asa seasoning, flavouring in many dishes, or as a condiment on kofta (meatballs), Kebabs and souvlaki like skewers, even in stewed dishes, like Moroccan tagines. It is not expensive, just keep it in a sealed jar as it can go stale if exposed to the air.
