Sauvignon or Merlot for red wine cooking? any advice wanted?

I heard either Sauvignon or merlot and also Burgundy. I am basically only using red wime for bordelaise sauces for red meats and steaks.
ps and i know any wine id drink would be acceptable to cook with.

It is true that any of those wines would work. Since it gets cooked it doesn’t really retain a lot of its character.

That being said, one thing to consider for traditional sauces is what region does it come from and what wine do they make there.

- For a Bordelais sauce, that’s from Bordeaux so a Bordeaux wine would be the traditional base. Bordeaux are made primarily from Cabernet Sauvignon or Merlot so either would work well.
- A Beef bourgignone on the other hand is a traditional dish from Burgundy, so you’d use a red Burgundy or Pinot Noir.
