Recommendations for a good wine to use for making Wine Jelly for dessert, please?
Maybe you know what it is, but in case you do not, Wine Jelly is a clear dessert jelly made of wine, some plain gelatine powder, and a touch of sugar …served in dessert glasses, with clotted cream, plain cream, or a thin custard … usually after a roast dinner …
It is usually made of red wine / port / claret or
of amber port. At home we used a boxed powder mix, but I would like to make it myself. Would you be so kind as to say what kind of wine you think would be good to use for this ?
Would a sparkling wine be nice? Ooh … champagne jelly … it is all starting to come back to me now … please say ?

Depends what else you may be using.
Pears, Cranberries, Rasps, Blue Berries or a mix of red fruits i would use a cabernet sauvignon.
Grapes, Peaches, Apricots – a muscadet.
Tropicals such as Mango, Dragon fruit, Pineapple a lovely Rose.
Wow ! this has really taken me back too! When our children were small we had lots of Jelly and sometimes infused with different wines, they slept well, haven’t turned out to be alcoholics and are all very healthy 20 somethings – however they don’t eat christmas pudding so i always make a special jelly for them for lunch and they and their partners eat it whilst we carry on with our brandy infused christmas pud and rum sauce – p.s. we are not alcoholics – just enjoy great food!
